Ingredients:

For the Salad:

  • 4 cups mixed salad greens (e.g., lettuce, spinach, or romaine)
  • 1 cup lean ground turkey or chicken (cooked and seasoned with taco seasoning)
  • 1 cup black beans (canned, drained, and rinsed)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell pepper (any color), diced
  • 1/4 cup low-fat shredded cheddar cheese
  • 1/4 cup corn kernels (canned or frozen, thawed)
  • 2 tablespoons sliced black olives (optional)
  • Salsa for dressing

For the Taco Seasoning:

  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions:

  1. In a skillet, cook the hung ground turkey or chicken over medium intensity until it's not gone pink. While cooking, add the taco-preparing ingredients (chili powder, ground cumin, paprika, garlic powder, onion powder, oregano, salt, and black pepper) to prepare the meat.
  2. In a huge plate of mixed greens bowl, gather the combined serving of mixed greens as the base. 
  3. On top of the greens, add the cooked and prepared ground meat.
  4. Arrange the black beans, cherry tomatoes, red onion, diced bell pepper, and corn over plate the salad.
  5. Sprinkle the low-fat shredded cheddar cheese and sliced black olives (if using) on top.
  6. Drizzle the salad with your choice of salsa as a dressing. You can adjust the amount to your taste, keeping in mind that it adds flavor and moisture to the salad.
  7. Toss the salad gently to mix all the ingredients and distribute the dressing evenly.
